What is Pulsed Electric Field Technology?
Pulsed Electric Field (PEF) technology employs high voltage electrical pulses to treat solid and liquid foods. Subjecting food cells to these high voltage pulses disrupts the natural polarity of the cells, opening pores in the cell's membrane, enabling the movement of water and intracellular compounds out of and into cells.
The result - significant changes in the food's physiology. Foods are softer, dry better, cut more smoothly, freeze quicker, absorb solutions better, extraction yields are improved, and much more.

Hygiene
As with all our equipment, hygiene and cleanability are a key focus for the FPS PEF system. Outside belt returns allow for mid-production belt cleaning, improving hygiene and minimizing belt wear. The jacks lift the treatment chamber and belts out of the chamber, making hard to reach areas easily accessible and cleanable. Optional CIP systems further helps maximize hygiene.

OptiCept's patented CEPT® system makes the FPS PEF the most efficient on the market. Energy savings can be significant depending on the application.
Lowest cost of ownership
The FPS PEF system was designed to reduce maintenance and minimize downtime. Our modular generators not only minimize the system's footprint, but also allow us to build optional redundancy into the system. With an additional generator unit, if one generator were to fail, the others ensure your production isn't impacted. Easy-change electrodes, externally returning Intralox belting, external motors, and minimal complex construction, reduces maintenance and downtime.
