GEM French Fry Fryers can be built for a wide range of throughput capacities. The fryers’ optimized oil flow and circulation control ensures consistent two-stage frying performance for uniform product quality along with perfect colour and texture. Keeping safety in mind, the specially designed fryer kettles eliminate dead spots and reduce fire hazards while increasing oil shelf life.

SPECIALTY FRYERS

 
 

GEM Specialty Fryers are designed to handle various shapes and textures of different potato specialties or co-products, from hash browns to croquettes. With low system oil volume, additional oil valves can be included to offer optimal frying results. A singulated layer of product avoids overlap and inconsistency, while the fryers’ robust construction enables longer cook time for higher efficiency.

Low system oil volume is critical to achieving a high-quality finished product. At GEM, every fryer design undergoes Computational Fluid Dynamics (CFD) or flow modeling, to perform hypothetical analyses of the cooking operation of the fryer kettle to optimize product quality and cooking oil usage. As oil degrades due to heated temperatures for extended periods of time, GEM engineers can provide fryer oil design solutions for quality performance.

BATTER APPLICATORS

For products that require batter application before frying, GEM offers robust batter applicators that can handle various loads and operating conditions at high production rates. The products immersed in a prepared batter mixture run through conveyors or a dipping system to ensure consistent, uniform coating and complete coverage. Heavy-duty batter belts can be built up to 12 feet wide. With redesigned side chain links, the durable system withstands pull and breakage, which leads to reduced maintenance and extended service life. The batter applicator also has a Clean-in-Place hood construction for efficient cleaning and quicker turnover times between products.
